The 16th Annual ProStart Teacher Training Institute takes place June 24-29, 2012. The week-long training provides Florida ProStart instructors with the knowledge necessary to teach the ProStart curriculum. Each day’s learning is built around topics covered in the ProStart curriculum. The Teacher Training Institute includes four years of participation with the following topics being emphasized:
Year One: Knife Skills, Dining Room Service, Stocks and Cooking Fundamentals in Food Production
Year Two: Garde Manger, Advanced Cooking Techniques, Soups and Sauces
Year Three: Special Event Planning, Advanced Kitchen Design and Layout, Cake Decorating and Plated Desserts
Year Four: Baking and Pastry, Entrepreneurship
LOCATION
All classes will be held at Johnson & Wales University (JWU) North Miami campus, 1701 NE 127th Street, North Miami, Florida, 33181.
EVENT INFORMATION
The following will be included in the week training:
• Welcome Reception on Sunday evening
• Classes and labs conducted by JWU Chef Instructors
• Accommodations at a JWU dorm
• Breakfast & lunch, Monday thru Friday
• Two chef jackets
PROGRAM COST
The FRLAEF will cover the cost of all Florida ProStart instructors who will be teaching the ProStart curriculum during the 2012-2013 school year. Attendees will be responsible for their travel and some meals.
SERVSAFE EXAM
A ServSafe review class and exam will be offered on Wednesday, June 27, 2012. In order to study for the exam, all examinees will receive a copy of ServSafe Essentials prior to arrival at Teacher Training.
